VitaClay Shrimp Scampi

I made this recipe in the new VitaClay Smart Organic Clay Crock & Stock Pot.  It's super easy and delic!

Ingredients

  • 2 lbs. raw pre-peeled shrimp
  • 4 tbs. salted butter or ghee melted
  • 1/2 cup white wine (I used Sauvignon Blanc)
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh parsley chopped
  • 5-6 garlic cloves peeled and minced
  • dash of pepper and salt
  • 1/2 tsp lemon zest (optional)

Directions

Add all ingredients in the stock pot and cook on "fast" function for 1/2 hour.

Notes

Serve with pasta, or your favorite grain, and a side of toasted sliced baguettes drizzled with olive oil or butter.  Don't forget to top with shredded parmesan cheese.
